Ingredients
- ½ cup uncooked basmati rice
- 300g northern shrimp
- 2 beaten eggs
- 2 cups bean sprouts
- 2 medium carrots, grated
- 1 small yellow onion, finely chopped
- 2 green onions, thinly sliced
- Finely chopped cilantro
- Salt
Sauce
- ½ cup FitCook Foodz The Bangkok sauce
- 1 tablespoon lime juice
- 2 tablespoons natural peanut butter
Garnish
- ½ lime, cut into wedges
- A few coarsely chopped peanuts
Steps
1. Cook the basmati rice.
2. In a bowl, mix all the sauce ingredients together. Set aside.
3. In a skillet with a drizzle of oil, sauté the onion for 1 to 2 minutes over medium-high heat.
4. Add the eggs to the skillet and quickly stir with a spatula until the eggs are cooked.
5. Add the rice, shrimp, and carrots. Mix. When everything is hot, remove from heat.
6. Add the bean sprouts, cilantro, and sauce. Mix again.
7. Place everything in a serving dish. Top with peanuts, green onions, and a lime wedge.
