INGREDIENTS AND QUANTITIES:
Meat
- 400 g lean minced pork (or minced meat of your choice)
- ½ cup (125 ml) kalamata olives, chopped
- 2 cloves garlic, chopped
- 1 tbsp (15 ml) dried oregano
Sauce
- 2 tbsp (30 ml) plain Greek yogurt
- 1 tbsp (15 ml) light mayonnaise
- 1 tbsp (15 ml) of La Mielleuse FitCook Foodz
- 1 tbsp (15 ml) red wine vinegar
- 1 lemon (zest only)
- ⅓ cup (85 ml) fresh dill, chopped
Bowls
- 1 tomato, cut into pieces
- 1 green pepper, cut into pieces
- ½ red onion, thinly julienned
- 3 Lebanese cucumbers, cut into pieces
- 1 heart of romaine lettuce, chopped
- 1 lemon (juice only)
- ¼ cup (60 ml) feta, crumbled
STEPS:
- In a skillet over high heat sprayed with oil, place all the meat ingredients. Cook for 6 minutes, stirring regularly. Season with S&P. Set aside.
- In a bowl, put all the ingredients for the sauce. Season with S&P and mix well. Set aside.
- Make a bed with the chopped romaine heart in bowls. Add the lemon juice and mix well.
- Add tomato, green pepper, red onion, cucumbers, meat, sauce and feta to bowls.
