Greek Bowl with Honey

INGREDIENTS AND QUANTITIES:

Meat

  • 400 g lean minced pork (or minced meat of your choice)
  • ½ cup (125 ml) kalamata olives, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp (15 ml) dried oregano

Sauce

  • 2 tbsp (30 ml) plain Greek yogurt
  • 1 tbsp (15 ml) light mayonnaise
  • 1 tbsp (15 ml) of La Mielleuse FitCook Foodz
  • 1 tbsp (15 ml) red wine vinegar
  • 1 lemon (zest only)
  • ⅓ cup (85 ml) fresh dill, chopped

Bowls

  • 1 tomato, cut into pieces
  • 1 green pepper, cut into pieces
  • ½ red onion, thinly julienned
  • 3 Lebanese cucumbers, cut into pieces
  • 1 heart of romaine lettuce, chopped
  • 1 lemon (juice only)
  • ¼ cup (60 ml) feta, crumbled

STEPS:

  1. In a skillet over high heat sprayed with oil, place all the meat ingredients. Cook for 6 minutes, stirring regularly. Season with S&P. Set aside.
  2. In a bowl, put all the ingredients for the sauce. Season with S&P and mix well. Set aside.
  3. Make a bed with the chopped romaine heart in bowls. Add the lemon juice and mix well.
  4. Add tomato, green pepper, red onion, cucumbers, meat, sauce and feta to bowls.
