Crispy salmon with fennel salad

Ingredients and Quantities:

Salmon

  • 2 salmon fillets
  • ¼ cup (60 mL) walnuts, chopped
  • ¼ cup (60 mL) green olives, chopped
  • ¼ cup (60 mL) fresh dill, chopped
  • ¼ cup (60 ml) La Mielleuse des Fit Sauces

Salad

  • 1 Granny Smith apple, thinly sliced
  • ½ fennel bulb, thinly sliced
  • ¼ red onion, thinly sliced
  • ¼ cup fresh dill, chopped
  • ¼ cup (60 ml) La Mielleuse des Fit Sauces

Steps:

  1. Preheat oven to 350.
  2. In a bowl, put the walnuts, olives, dill and La Mielleuse des Fit Sauces. Season with S&P and mix well to make a crunchy topping.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and add the filling on top. Bake for 12 minutes.
  4. For the salad, put all the ingredients in a bowl and mix well.
  5. Serve the nut-crusted salmon with the salad.

Tip:

To make thin slices of apple, fennel and red onion, I love using a mandoline. This makes it possible to obtain ultra-thin and regular slices, a result almost impossible to obtain with a knife.
