Here is my recipe for crispy salmon with walnuts, olives, and dill, topped with La Mielleuse, our sugar-free honey mustard sauce from FitCook Foodz. Served with a crisp salad of apple, fennel, and red onion, this is a light, flavorful dish full of texture. Ingredients and Quantities:
Salmon
- 2 salmon fillets
- ¼ cup (60 mL) walnuts, chopped
- ¼ cup (60 mL) green olives, chopped
- ¼ cup (60 mL) fresh dill, chopped
- ¼ cup (60 ml) La Mielleuse des Fit Sauces
Salad
- 1 Granny Smith apple, thinly sliced
- ½ fennel bulb, thinly sliced
- ¼ red onion, thinly sliced
- ¼ cup fresh dill, chopped
- ¼ cup (60 ml) La Mielleuse, Sugar-Free Honey Mustard Sauce by FitCook Foodz
Steps:
- Preheat oven to 350.
- In a bowl, put the walnuts, olives, dill and La Mielleuse. Season with Salt & Pepper and mix well to make a crunchy topping.
- Place the salmon fillets on a baking sheet lined with parchment paper and add the filling on top. Bake for 12 minutes.
- For the salad, put all the ingredients in a bowl and mix well.
- Serve the nut-crusted salmon with the salad.
Tip:
To make thin slices of apple, fennel and red onion, I love using a mandoline. This makes it possible to obtain ultra-thin and regular slices, a result almost impossible to obtain with a knife.
