Ingredients:
- 250 g cod
- ½ cup panko breadcrumbs
- 1 egg
- ¼ cup flour
- 6 mini tortillas
- ¼ cup finely sliced romaine lettuce
- ¼ cup shredded purple cabbage
- ¼ cup diced tomatoes
- ¼ cup finely diced pickles
- ½ small red onion, finely diced
Sauce
- 1 avocado
- ½ cup Greek yogurt
- ⅓ cup The Big, FitCook Foodz low-calorie burger sauce
Steps:
- Cut the white fish into fillets.
- Put the flour in a small bowl. Put the egg in another bowl. Put the panko in a third bowl.
- Dip each piece of fish first in the flour, then in the egg mixture, and finally in the panko to coat each piece thoroughly.
- Place the fillets in the AirFryer for about 10 to 15 minutes.
- While the fish is cooking, prepare the toppings.
- Using a hand blender, purée the avocado with the Greek yogurt and FitCook Foodz La Big sauce until smooth and creamy.
- Heat the mini tortillas in a hot skillet for a few seconds on each side until they are lightly browned and soft.
- On each tortilla, add the creamy sauce, a little lettuce, shredded cabbage, tomatoes, pickles, and red onion.
- Place a piece of breaded fish on top.
- Garnish with hot sauce (optional).
