INGREDIENTS AND QUANTITIES:
- 1 yellow onion, chopped
- 4 cloves garlic, chopped
- 2 cups (500 ml) gluten-free macaroni (or pasta of your choice)
- 3 ½ cups (875 ml) chicken broth
- ½ bottle of L a Fogo FitCook Foodz
- 2 cups cherry tomatoes, halved
- 2 colored peppers, chopped
- 4 cups (1L) arugula
- 650 g of shrimp of your choice, raw
- 1 lemon, sliced
STEPS:
- Preheat oven to 400F.
- In a large saucepan, add onion, garlic, pasta, broth, La Fogo FitCook Foodz and peppers. Mix well, cover with aluminum foil and bake for 15 minutes.
- When removing from the oven, remove the aluminum foil. Mix well.
- Add cherry tomatoes and arugula. Mix well before topping with shrimp and lemon slices. Season with S&P.
- Bake for 15 minutes for a second cooking uncovered.
