Korean-inspired bowl with mushroom-flavored ground turkey, vegetable strip salad, and fried egg.

INGREDIENTS AND QUANTITIES:
Ground turkey
- 1 box of mixed mushrooms, chopped
- 3 cloves garlic, grated
- 2 tbsp (30 ml) grated ginger
- 2 tbsp (30 ml) Fitcook Foodz Grilling Spice
- 600 g lean ground turkey (or lean ground pork)
- ½ cup (125 ml) sugar-free Teriyaki sauce of your choice
- 2 tbsp (30 ml) sesame seeds
Salad
- 3 Nantes carrots, cut into strips using a peeler
- 3 Lebanese cucumbers, peeled and cut into strips
- 1 small red onion, thinly sliced
- 3 tbsp (45 ml) fresh coriander, chopped
- 2 tsp (10 ml) sesame oil
- 1 lime (juice only)
Toppings
- 4 eggs, cooked until golden brown
- 2 green onions, finely chopped
- 1 tbsp (15 ml) sesame seeds
STEPS:
- In a frying pan over high heat sprayed with oil, place the mushrooms. Cook for 2 minutes, before adding the garlic and ginger. Continue cooking for 2 more minutes, stirring regularly.
- Add ground turkey to pan. Add FitCook Foodz Grilling Spices and break turkey into small pieces. Continue cooking for 5 minutes or until turkey is cooked through.
- At the end of cooking, add the Teriyaki sauce and sesame seeds to the pan. Mix well to coat. Set aside.
- In a bowl, put all the salad ingredients. Season with S&P and mix well.
- Serve the ground turkey mixture over rice with salad and garnishes.
ADVICE :
To make a fried egg, here's a super cool technique. In a pan over high heat sprayed with oil, crack your egg. About 30 seconds later, when it starts to coagulate, pour 1 tbsp (15 ml) of water into the pan and cover with a lid. The steam from the water will cook the top of the egg in no time!
