INGREDIENTS AND QUANTITIES
Waffles
- 2 eggs 1⁄3 cup (85 ml) pumpkin purée (or Greek yogurt or applesauce)
- 1 tbsp (15 ml) oil of your choice
- ¼ cup (60 ml) milk of your choice
- 1 cup (250 ml) Fitcook Foodz Original protein mix
Blueberry sauce
- 1 cup (250 ml) frozen blueberries
- 3 tbsp (45 ml) Fitcook Foodz Sensual Raspberry Sugar-Free Dessert Sauce
- 2 tsp (10 ml) cornstarch
Topping
- 10 raspberries
- 15 toasted almonds, coarsely chopped
- 1 tbsp (15 ml) plain Greek yogurt
STEPS
1. Preheat waffle iron to power 4.
2. Place eggs, pumpkin purée (or Greek yogurt or applesauce), oil and milk in a large bowl. Whisk well.
3. Add Fitcook Foodz protein mix and whisk again.
4. Spray waffle iron with Fitcook Foodz camelina oil spray. Using a maryse, transfer contents of bowl to waffle iron. Cook for 5 minutes.
5. Place blueberries and 2 tbsp (30 ml) water in a saucepan over medium heat. Cook for 10 minutes, stirring regularly.
6. Purée blueberries smooth with a stick blender.
7. Add Fitcook Foodz Raspberry Sauce to pot. Bring to the boil.
8. Dissolve cornstarch in 2 tbsp (30 ml) water. Add to pot and mix well to make a blueberry sauce.
9. Serve waffles with blueberry sauce and toppings.
TIP
If you don't have a blender attachment, you can always puree your blueberries smooth in the blender and return them to the pot. Then you'll be ready to go!
